Happy Birthday!

We celebrated IQ Home's first birthday with Paula from Balbisiana and her Charlotte cake, perfect for the occasion. Paula cooked us her exquisite chocolate sponge cake with red berry mousse to enjoy our anniversary.

How to assemble the cake

1. Cut the chocolate cake into 3 discs.
2. Place a sponge cake disc on the baking dish and cover with a thick layer of mousse. Place another sponge cake on top and cover again with mousse. Cover with the last sponge cake and cover the whole cake with mousse, including the sides.
3. Place the ladyfingers around the cake and tie with a bow.
4. Fill with a little more mousse if we have any left over.
5. Decorate with fresh fruit (blueberries, raspberries, blackberries, strawberries and currants).

ingredients for the mousse

600g of 35% fat cream
300gr of white sugar
50gr of blackberries
50gr of blueberries
6 strawberries
50gr of raspberries
